boozy stew…a fall/winter belle staple

Although the temps seem to have been on a roller coaster (mostly uphill) across the south this fall, we like to pretend we have cooler weather to warrant the classic fall/winter recipes we have up our sleeves.  Case in point…this Guinness Stew we decided to make for a football-watchin’ crowd a couple of weeks ago…when it was 75 and sunny!  It was belleicious anyway…just sayin’. We served it alongside this kale and quinoa salad, courtesy of a dear belle-friend.  An-delicious (that’s Irish for very delicious!)

We found the original recipe from Clodagh McKenna via the Today show, but made some tweaks (as we do) to make it ours.


The Belles’ Boozy Guinness Stew

2 T butter

1 T olive oil

12 slices bacon, cut into 1″ bits

12 shallots, peeled but left whole

2 1/2 lb cubed stewing beef

2 lb mixed mushrooms, sliced (we used shiitake and baby bella)

1 qt Guinnesss

1 bouquet garni (we used bay leaf, thyme and tarragon)

Kosher salt and freshly ground pepper


We like to gather ingredients and do the prep so that all goes smoothly

 The assembly of the bouquet garni. (We actually only used 2 of those bay leaves)

Now for the cookin’…


Start by melting butter in a large dutch oven or cast iron skillet.  Add a swirl of olive oil and heat.  Add bacon and brown


Add shallots and allow to cook with bacon for a couple of minutes.  Transfer bacon and shallots to another dish


Sear beef, seasoned with salt and pepper, in the same dutch oven (scraping up the bacon bits for flavor).  After a quick 2 minute sear, remove beef…


…and add mushrooms.  Sauté 1-2 minutes.  (We added a bit of olive oil to the shrooms after a bit)

Add bacon, shallots, and beef back to mushrooms (if using dutch oven).  Otherwise, place all in a covered casserole, pouring pan juices on top.  Add the bouquet garni.

Now for the booze…


Drop in the bouquet garni and add the Guinness…


Ready for the oven!!

Cover and place in the oven at 325 degrees for 2 hours.


Ready for the table…belleicious!!

***Slow cooker tip #1…if you can start earlier in the day, pop all of this in your slow cooker and cook on low for 8 hours…or high for 4.

***Slow cooker tip #2…you could even do this one day, allow to cool, pop in the fridge, and slow cook it for a couple of hours on low the next day.  Voila!  A belle-ringin’ dinner on a busy day!

And here’s the recipe all-together (screenshot-able perhaps)…

The Belles’ Boozy Guinness Stew

2 T butter

Melt butter in large dutch oven.  Add a swirl of olive oil

Transfer bacon and shallots to another dish.

Add beef, season with salt and pepper, and sear, scraping up bacon bits from pan.  

Remove beef.

Add mushrooms and saute 1-2 minutes.

Place all ingredients back together in dutch oven (or any large, covered casserole)
Add bouquet garni
Add Guinness

Cover and bake at 325 degrees for 2 hours

Serving suggestions:  

– Although we chose to skip the carbs with the salad, this would be excellent (and authentic) served with mashed potatoes…or add bite-sized potatoes to the stew before baking

Belles are foodies and love to cook, but we also love food finds that make our lives easier and tastier. We discovered this delectable concoction.

We served it over cream cheese alongside a variety of crackers.  Celery would be a great low-carb option. Let us tell you…it was inhaled. 

It is the perfect item to have for impromptu gatherings. 

We also like the idea of jazzing up our grilled chicken with it or as a condiment with shrimp. The options are endless!

Our belle-ringers of the week…

We are always looking for a way to give ourselves a pat on the back…not so easy when your to do list is a mile long and your hard pressed to cross anything off! Well here’s a great list of things that you can actually get done pronto!!

bringin’ home the bacon…a retro recipe friend-1-1

Back in the day…some would say the olden days…our moms would make these delectable morsels of bacon-wrapped delight.

They are super-easy to make and will bring back fond memories of days gone by. And, bonus…the calories don’t count as you’ll eat ’em standin’ up!!

Bacon-wrapped Delight Appetizers

Preheat oven to 250 degrees

Lay out Waverly club crackers on a cookie sheet or, as we like to do, on a broiler pan. One sleeve fills a standard sheet perfectly.

Top each cracker with a teaspoon of grated parmesan.
Now add a sprinkle of brown sugar over each cracker.

Take one pound of regular sliced bacon, cut in half (you may need more depending how many crackers you use)

Wrap each cracker tightly in a half-slice of bacon, covering as much of cracker as possible.

Place in oven and bake at 250 for about two hours

Serve and devour!!

By the way, they freeze beautifully and only need to be thrown in the oven at 350 degrees for about 10 minutes. Perfect for when last-minute friends drop in for a visit.  

Remember…everything is better with bacon!!!

IMG_2727We’ve been up to the cocktailing again, and this time we upped our game with a bit of bacon as a bonus! We headed out to Bacon Brothers Public House to sample their already legendary menu of creative cocktails…and they did not disappoint. This place is reeling with enthusiasm and a real passion for what they are doing behind that buzzing bar. These bartenders (they don’t like the pretentiousness of the term “mixologists”…big points there) all create, share, and have input on the fine details of the libations. They make their own bitters and shrubs (see our description below) daily, letting inspiration, spontaneity, and creativity guide them. We reap the rewards. Holla!

We tried the “Gin Shrub Fizz” and the “Fog Cutter” (perfect the San Francisco native), and we were quite happy with our choices!

Made with Damrak Gin, fruit shrub (spiced-apple in this case), and sparkling wine, the “Gin Shrub Fizz” kept us effervescing for a bit…a quality we love! It’s a nice balance of fruity and crisp…a cool, calm, collected sort of drink. This particular concoction will change as the shrub flavors change, so it might be worth a try every couple of weeks!

The “Fog Cutter”, made with rum, gin, brandy, byrrh (pronounced “beer”), allspice dram (again…we will explain this in a minute), and a touch of kumquat, is a strong, swarthy sort of cocktail. The citrus of the gin balances the bitterness found in the byrrh which is made with quinine, said to aid with digestion…a healthy bonus! Kumquat is apparently the next trend in cocktails. We are all aboard!

Now…to explain the “shrub”, which beats anything you’ll find in the yard! Used to flavor cocktails or sodas, this kind of shrub is a blend of fruit, sugar and vinegar. The recipe dates from 15th century England but is enjoying quite a revival. Gabriel, the brilliant Bacon Brothers beverage manager, uses in-season fruits to create a new shrub every couple of weeks.

And as for that “dram”…a dram can simply be a small portion of something to drink. However, the allspice dram used in the Fog Cutter is made with highly-spiced rum. We have discovered that allspice dram is apparently hard to come by, so Bacon Brothers is in the know!

“The Burger”…need we say more?

And one should never cocktail-it-up without a nibble or two! We sampled the pimento cheese with bacon jam with house-made saltines…wow! We would have licked the bowl if our mamas hadn’t taught us right…(besides it was too crowded to get away with it!). And had we not filled up on the snack (mama lost the battle here…we ruined our dinner!), we would have sampled the heavenly burger the waiters so bravely brandished about! They need to watch their step…we might just decide to grab one and run next time!

On a follow-up visit, the belle with the son who’s pretty much all about bacon discovered that we are quite partial to the Bacon Caramel Popcorn…IMG_2728Lord, have mercy!
It’s a real winner…a must-try!

As far as what to expect of this fine establishment if you haven’t ventured over there just yet, Bacon Brothers is a relaxed, casual kind of place…so anything goes. The décor is rough-hewn with cozy lighting, exuding warmth and comfort…like your favorite pair of jeans. And the food is as creative and authentic as the cocktails!

So, belles…we suggest you make your reservations now! When (not if) you go, plan to step out of your box and experiment with options you won’t have just anywhere. Save the Pinot and suds orders for less creative establishments. Let these guys show you what they can do. You won’t regret it!

Bacon. Maple syrup. Crunch. Could there BE a more enticing combination??

Now, a belle knows the value of a good piece of bacon…it can season up a pot of greens in a skinny minute, and it’s aroma can beckon even the drowsiest of family members or house guests to the kitchen at the crack of dawn.

But this little twist on bacon prep takes it to a whole new level…cocktail party/fancy brunch level even! From The Clever Carrot, this recipe will knock their socks off over and over again!

best bacon tip ever…a quick and savory friday friend-1-1

These two belles loooove bacon. We also love to save time (usually because we have run out of it!!) and we love brilliant ideas that don’t break the bank!

Tracy from shutterbean.com shares the perfect bacon tip. She suggests a great option to relieve yourself of muss and fuss and a greasy clean-up. Head to your nearest Whole Foods breakfast bar and load up on a container of their hormone free, humanely raised bacon. It is marked at a pretty reasonable price and is absolutely delicious to boot! A great way to save time and effort when you are running out of both.

Lately, when we do have time, we have found cooking bacon on a broiler pan at 350 for 15 to 20 minutes is easy-peasy. Clean up is no problem and it is really easy to save the bacon fat from the broiler pan.

If y’all have any other great tips, please share as we love any excuse to “bring home the bacon and fry it up in a pan “!!
