Well…it has certainly been an interesting couple of months to say the least! “Social distancing” and “sheltering in place” caused quite a few unforeseen challenges – especially in terms of our drinkin’ habits! On one hand, we have been far less social lately with no big weddings, galas, or other shindigs to attend. On the other hand (for some of us), staying home with nothing else to do for weeks on end has driven us to drink a bit more than usual. A belle needs something to look forward to…just sayin’.

We thought we would share what we have found to be an excellent way to drink up any wine you might have left in the cellar…with the potential to serve a crowd (if we ever get to serve a crowd again!).  And – it just happens to be perfect for those hot summer days to come.  Sangria!

First – a bit of history…

Sangria started out of necessity centuries ago as wine, fruits, and spices were mixed into bacteria-filled water.  That little touch of alcohol made the water safe to drink…and the fruits and spices made it tolerable.  The Spanish named it “sangria” (blood) because of the red wine they were using.  These days, under European law, all sangria must be made in Spain or Portugal – but the very best sangrias are made right in your kitchen!

Red, red, sangria…

This is perfect for those who might be trying to avoid too much sugar (can you say quarantine 15?). This particular version uses lemon, lime and orange juices along with agave nectar to add just the right amount of sweetness with a bit less guilt. It sits it the fridge overnight – or you can keep adding to it for weeks on end so that you never run out! Raspberries and sparkling water are added at party time for a surprisingly balanced sweet, savory & fruity elixir.

  • 1 bottle red wine
  • 1 lemon (cut into wedges)
  • 1 lime (cut into wedges)
  • 1 orange (cut into wedges)
  • 1 cup raspberries (fresh or frozen)
  • 1/2 cup agave nectar
  • 2 cups sparkling water (club soda)
  • Pour the wine into a pitcher. Squeeze the juice from the lemon, lime and orange wedges into the wine. Toss the fruit wedges into the pitcher (leaving out the seeds if possible). Add the nectar and stir well. Chill overnight. Add sparkling water and raspberries before serving over ice.

Everything’s coming up rosé…

It’s actually hard to drink rosé ALL day – well, for some, but not all of us! This sangria might make it a bit easier! Simply pour a bottle of dry rosé into a pitcher and add lime juice, sliced strawberries, lemon-lime soda and a bit of sugar. Cut several mint leaves into thin strips and add to the pitcher for a savory, herby touch. The result is a crisp, slightly sweet refresher that is sure to be a crowd-pleaser (again…if crowds are a no-no, just pretend you have friends around and down the whole thing yourself – no one would blame you!)

  • 1 bottle dry Rosé
  • 1 cup strawberries (sliced)
  • 4 cups lemon-lime soda
  • 3 limes (squeeze juice of two limes, keep one lime thinly sliced)
  • 2 – 3 tablespoons sugar
  • 2 tablespoons mint (fresh)
  • Gather the ingredients. Place sliced strawberries, lime juice, sliced lime and rosé in a pitcher. Cut the mint into thin strips and add to the pitcher. Add the sugar and soda, stir, and serve.

Instant sangria…

In these crazy times, we sometimes need a cocktail that is immediately available to wet our whistles and calm our nerves. This delightful instant sangria only needs a few ingredients and a little freezer time to be ready at a moments notice. Simply freeze blended fruit and ginger ale in ice trays and keep them on hand. Drop them in your favorite red or white wine, stir for a quick bit, and you are well on your way to a refreshing respite from this other world we’ve been living in. And bonus points here…the kiddos can enjoy the little ice pops right from the freezer!

  • 1 lemon
  • 1 lime
  • 1 orange
  • 1 cup raspberries
  • 1/2 cup strawberries
  • 1/3 c sugar
  • 2 cups ginger ale
  • 1 bottle wine (red or white)
  • Peel the lemon, lime, and orange, removing the seeds. Put the citrus fruits into a blender with the raspberries, strawberries, sugar, and ginger ale. Blend all of the ingredients (except the wine) together, until it is “slushy.” Pour the slush into ice cube trays and freeze. When the mixture is completely frozen, pop the cubes into a plastic freezer bag and keep frozen. At drinkin’ time, pour yourself a glass of wine and plop 3 to 5 Sangria cubes into the glass. Stir and enjoy!

Grab a pitcher and a bottle of wine (your choice) and get busy! We are here for you, belles!!

a super-fresh end-of-summer salad…

We’ve seen versions of watermelon/feta salads and have tried many over the years, but this one creation over Labor Day weekend really rang some belles!

Using sweet end-of-summer peaches along with the watermelon, feta and basil, we took this salad to a new level of belleiciousness…


Belle-ringin’ Watermelon Peach Salad

4 cups watermelon chunks

2 cups sliced peaches

3/4 c basil, chiffonade

1 c crumbled feta

2 T lime juice

2 T white balsamic vinegar

2-3 T c olive oil

1/2 t kosher salt


Place vinegar and lime juice in small bowl. Slowly drizzle olive oil into bowl, whisking to incorporate. Add salt, whisk. Set vinaigrette to side. 


Chiffonade basil

Place watermelon and peaches in a large salad bowl. 


Top with feta and basil. When ready to serve, toss with vinaigrette. 

Enjoy the belleiciousness!!

Needing something cool and yummy…and healthy to boot?  We gotcha covered!  Check out this bit of belleiciousness…

Sriracha-Lime Corn Salad from Food 52

Here’s what you will need:


3 ears of summer corn, sliced off the cobs

1 red bell pepper, chopped, and 1/4 cup chopped parsley

Lime for squeezing

You will also need olive oil, sriracha, and Cotija cheese


This corn salad can be used as way more than a salad. Try it as a salsa, a condiment for meat, chicken or seafood, over pasta or as a side.  It’s a multi-tasking no-brainer favorite. It only requires a few ingredients and yet the pay-off is huge.

Be forewarned , the first time we made it we, maxed out the siracha and it was a tad hot for the general public. So go easy at first as you can always add more.

simple summer supper…belleicious

With lots of travel and a complete lack of schedule in the summer…we struggle to find the time to prepare an entire meal!  Sound familiar?  Thought so.

But with all that travel, sometimes we just crave home-cooked, simple comfort food.  After one belle returned from a recent adventure, she pulled out a couple of old, easy standbys.  Thought we would share for a bit of inspiration…

BBQ Chicken Sliders and Summer Succotash (with a little kick)


The chicken, prepared in the slow-cooker, is just about the easiest thing imaginable:


Belleicious Crockpot Chicken Barbecue 

(similar to this version from Family Fresh Meals)

6 boneless, skinless chicken breasts

2 cups of your favorite barbecue sauce (or try our homemade sauce)

2 T worcestershire 

Place chicken in crockpot and season well with salt and pepper.  Pour bbq sauce and worcestershire over chicken and toss to coat.  Cover and cook on low 6-8 hours.  Remove chicken from pot and shred with two forks.  Return chicken to sauce, stir to coat, and allow to warm in the crockpot until ready to serve.

Done!!

Serve alone or as a slider or full sandwich with extra sauce…and if you want to do it up right, add some coleslaw.  Belleicious!!

Summer Succotash with a kick

(Loosely adapted from this FoodNetwork recipe and inspired by our friend, Cathy, ages ago!!)

2 cups corn kernels

2 cups baby lima beans

2 cups cut okra

2-3 tomatoes, chopped

1 jalapeño pepper, seeded and finely chopped

1 small onion, finely chopped

2-3 cloves garlic, minced

1 T butter

1 T olive oil

1 T kosher salt

1 t sugar

Fresh ground black pepper

Heat oil and butter in heavy saucepan or large skillet.  Add jalapeño, onion and garlic, sprinkle with salt, and sauté until soft.  Add corn, stir and cover.  Allow to simmer/steam 5-10 minutes until slightly tender.  Add lima beans, okra, sugar and a couple tablespoons water.  Stir well and cover again.  Allow to simmer another 20-30 minutes until all veggies are tender. Adjust salt if needed and add tomato.  Grind pepper on top.  Stir.  Serve!

Easy, peasy belleiciousness!

Tomato season is full-on and we are all-in….

Sliced with sea salt, slathered with mayo on soft white bread, a classic BLT…a bounty of tomatoes makes a belle’s mind spin!

Here are two of our favorite recipes for tomato pie…an all time favorite here in the south and sure to be one of yours!! 

This first rendition is one that our belle gal pal, Nancy, swears by and is a cleaner version of the traditional ‘mater pie. She pulled it out out of a Southern Living ages ago and has been making it ever since.  The key is using the best ingredients available!

Nancy’s Tomato Pie

Preheat oven to 400

1 prepared refrigerated pie crust dough. Fit and trim into a 9 inch pie pan. Prick with fork all over. 

Bake crust for 5 minutes.

Sprinkle 2 cups of shredded mozzarella evenly over crust.

Sprinkle generously with chopped fresh basil.

Slice about 3 medium tomatoes or a basket of the baby sweet heirlooms (we used a combo of both because that’s what we had) . 

Drizzle with 1 1/2 T good olive oil and a generous sprinkle of salt and pepper.

  

Return to oven and bake for 35-40 minutes . Let rest briefly , sprinkle with additional fresh basil and serve!

The next tomato recipe is the more traditional (not quite as diet-friendly) but equally delicious version of the south’s favorite savory summer pie!

the plight of white after Labor Day…go for it, belles!

Here’s a little emergency, bonus post. We feel compelled to remind you, dear belles, that you need not put away all of your white now that we have moved past Labor Day and toward the looming colder weather (we are kinda ready for some lower temps…aren’t you?).

We have heard many of our belle-friends questioning their fashion options in the last week because they have grown so attached to their white jeans through the summer…and they aren’t even close to being ready to put them away. Stop the madness!! Labor Day is not dooms-day in our book!!

Here’s proof:

With all of those delicious summer vegetables still in full bloom, a belle needs to know how to get them to the table in a belle-icious snap. Sometimes the simplest preparation is the best, so we thought it might be wise to check up on our (and your) blanching skills.

Blanching (sometimes called par-boiling) is super simple and yields fresh, crisp, beautifully-colored veggies…and, bonus, blanched veggies will keep their color and texture (and belle-iciousness) in the fridge for up to 4 days or in the freezer for up to 3 months! So…when October rolls around, you can have a little taste of summer to remind you of the lazy days.

THE EASY DIRECTIONS:

– wash and trim veggies
– fill a bowl with ice and water

– bring a large pot of water to a boil
– add kosher salt until the water is about as salty as the Atlantic…or Pacific

– boil the veggies until they are bright green (1-2 minutes will do)

– using a slotted spoon or tongs, move veggies to the ice bath
(The ice bath stops the cooking and makes them super crisp)
– once cooled completely, drain and pat dry

There you have it, belles…enjoy as a healthy, fresh meal accompaniment or as crudités…now and later!
